Sweet Potato Chili
medium onion
2 TBSP olive oil
salt
5 cloves garlic
2-3 jalapeno peppers chopped and seeded
1 cup lentils
4 cups vegetable broth
1 1/2 pounds sweet potatoes cut into ¾ inch chunks
32 oz can crushed tomatoes
2 - 16 oz can preferred beans (i used kidney beans)
1 can tomato paste
Preheat a 4-quart pot over medium heat. Saute onions in oil with a pinch of salt for 5 to 7 minutes....
